pumpkin bars

I love cooking, planning menus and collecting recipes! Now that fall is here I am always looking for new recipes using pumpkin! here is one of my all time favorites...

Pumpkin Bars

1 cup oil
2 cups sugar
2 cups pumpkin (16 oz can)
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon

Frosting
6 tablespoons margarine
3 ounces cream cheese
1 teaspoon vanilla extract
1 3/4 cup confectioner's sugar
2 tablespoons milk

Beat first 3 ingredients in a mixer bowl, until smooth. Add flour and next 4 ingredients mix well. Spread in a greased and floured 10 x 15 inch baking pan. Bake at 350 degrees for 20 to 25 minutes until brown. Cool completely.

Cream margarine and cream cheese in a mixer bowl. Add vanilla, confectioner's sugar and milk; mix well. Spread over cooled cake. Cut into bars. Yield 36 bars.
